 What is Wagyu?

Wagyu is a unique breed of cattle renowned around the world for producing exceptionally tender, flavorful beef. Its signature marbling is rich in monounsaturated fats, giving Wagyu its buttery texture, rich flavor, and melt-in-your-mouth eating experience. Here at Villacaro Farms, we raise Akaushi Wagyu, one of the four main Wagyu bloodlines and relatively rare outside of Japan, and often referred to as the "Emperor's Breed" of Japan. Known for its exceptional balance of flavor, tenderness, and healthy fat composition, Akaushi beef offers a truly distinctive dining experience.


The Villacaro Difference

At Villacaro Farms, we breed and raise purebred and fullblood Akaushi cattle, meaning our beef is DNA-verified to be at least 93.75% Akaushi. This level of genetic integrity directly influences the consistency, flavor, and quality of the beef we produce.

Many products labeled as "Wagyu beef" may contain a much lower percentage of Wagyu genetics, with the remaining genetics coming from other breeds such as Angus. While those products may still be marketed at a premium, they are not the same as true Akaushi beef.

Our commitment to verified genetics is just one part of what sets Villacaro Farms apart. As a locally owned, woman-operated farm, we choose to do things differently because we believe the difference matters, including our intentional work to introduce polled (hornless) genetics into Akaushi cattle, which naturally do not exist without incorporating a small amount of genetics from hornless breeds. This approach supports animal welfare by eliminating the need for de-horning. Through careful breeding, year-round pasture management, and regenerative farming practices, we raise beef from the ground up with a focus on nutrition, animal welfare, land stewardship, and transparency.

Whether you're preparing a weeknight dinner for your family or hosting a special celebration, exceptional meals begin with exceptional ingredients. At Villacaro Farms, we raise premium Akaushi beef with the belief that every cut should reflect the care that went into raising it.

Our primary offering is whole, half, and quarter beef shares, allowing families to stock their freezers with a wide variety of premium cuts while enjoying a direct connection to the farm where their beef was raised. Throughout the year, we also offer a limited selection of individual retail cuts available by appointment from our on-farm store, based on seasonal inventory.

Beyond serving families, we proudly partner with boutique restaurants, chefs, inns, wineries, and culinary events that celebrate the best of our region's food community. You'll often find Villacaro Farms featured at Root to Table events, where talented local chefs showcase our Akaushi beef alongside the incredible farmers, artisans, and producers who make the Shenandoah Valley and surrounding region such a remarkable culinary destination. We are always looking to collaborate with chefs and hospitality partners who share our commitment to exceptional ingredients and unforgettable dining experiences.

Because each animal is carefully raised and processed in limited numbers, our inventory is intentionally small. We encourage customers to reserve a beef share or contact us about current retail availability, restaurant partnerships, private events, or upcoming culinary collaborations.

Villacaro Akaushi

Genetics

Akaushi is one of only four original Wagyu bloodlines and is prized for its exceptional marbling, tenderness, and flavor. At Villacaro Farms, our cattle are DNA-verified to be at least 93.75% Akaushi, ensuring the consistency and quality our customers expect.

Raised with Patience

Marbling is the distribution of intra-muscular fat in beef. This is different that the saturated fat you see on the outer part of steaks. This marbling is a mono-unsaturated fat (MUFA), similar to wild salmon and olive oil! Research shows that MUFAs have an anti-inflammatory impact on the body.

Raised on Pasture

While many beef cattle are harvested between 18 and 24 months of age, our Akaushi are typically raised for 30–34 months. This slower approach allows the cattle to mature naturally and develop the rich marbling and flavor that make Akaushi so exceptional. We believe great beef simply can't be rushed.


Nutrition Begins on the Farm

At Villacaro Farms, we believe exceptional beef starts long before it reaches your plate. It begins with healthy soil, thriving pastures, and cattle raised with patience and care.

Akaushi beef is naturally known for its abundant marbling and a higher proportion of monounsaturated fats compared to many conventional beef breeds. This distinctive fat composition contributes to the rich flavor, tenderness, and exceptional eating experience that have made Akaushi one of the world's most sought-after beef breeds.

Unlike many beef cattle that are harvested between 18 and 24 months of age, our Akaushi cattle are typically raised for 30 to 34 months. We believe exceptional beef simply takes time. Rather than rushing the process, we allow our animals to mature naturally while slowly developing the marbling and flavor that make Akaushi so extraordinary. Like a fine wine, some things simply improve with age.

Our cattle spend their entire lives on pasture, where they graze diverse forages using regenerative grazing practices that promote healthy soils and thriving ecosystems. During the finishing phase, our steers receive a carefully managed supplemental grain ration while continuing to live on pasture—not in a feedlot. This additional nutrition provides the energy needed to develop Akaushi's signature marbling while allowing the cattle to continue expressing their natural grazing behavior.

For us, genetics are only part of the equation. We believe healthy animals produce exceptional food. By combining superior genetics, regenerative land stewardship, low-stress animal handling, and a thoughtfully balanced nutrition program, we produce beef that reflects our commitment to quality, transparency, and responsible farming.
